If you have followed me for a while you know that I have dreamed of learning how to make a good cocktail and Raul Yeh of Jalisco Norte  was the ultimate teacher. Not only does he let me pretend to be a mixologist for a moment, but we also get to chat about his story, what makes a good cocktail, and so much more.

Jalisco Norte Lead Bartender Raul Yeh has been in the restaurant business for decades. Originally from Merida Yucatan, he moved to Dallas at the age of 12 and got his first restaurant job at 16. He worked through the ranks learning how to cook, mix cocktails, become knowledgeable about tequila, and excellent at customer service. He spent the next several years honing his craft as head bartender at notable Dallas restaurants including Sangrias and El Bolero. Yeh was the mastermind behind El Bolero’s signature cocktail “The Oilman,” which was recognized as best margarita in Dallas by D Magazine in 2017.  In September of 2018, he joined the team at Jalisco Norte as the leader of the bar program and believes it was the best decision he ever made.  The first cocktail he added to the menu is one of the restaurant’s most popular: “The Smoke Show,” a 45-day-aged mezcal cocktail.  Raul loves what he does because it provides him the opportunity to keep creating bitters and cocktails with the whole Jalisco team. His most recent creation is the Dragon Fruit Margarita (Corazon de Dragon). When he’s not bringing people together at Jalisco’s bar, he enjoys spending time with his wife, cooking, finding creative new ways to make drinks, and creating different types of salts for new cocktails
