Enjoy meatball recipes from 1775 (a meat and vegetarian version) as we explore Ben Franklin hauntings in Pennsylvania and PigMen in Texas.

Vegetarian meatballs:
Crumb a pennyloaf, add to it eight ounces of butter or beef suet, mincinced very fine, lemon-peel, parsley, and a bit of onion shred fine.  Season it with pepper, salt, nutmeg, wet it with two eggs, roll it in your hands into a paste, then make it in small balls the size of a nutmeg; fry them in butter.
Recommend 6-8 ounces of breadcrumbs for the pennyloaf, the same amount of butter and about 1/3 cup of onion, maybe ½ cup. 

Meat meatballs:
Chop an equal quantity of any tender Meat with Beef or Mutton suet, and the same quantity of crumbs of bread, with lemon-peel, parsley, and onion chopped small; season it with pepper, salt, nutmeg and cloves: Wet it with eggs, and work it up together, then roll into small balls.  Fry them in butter.
