With the official start of summer, just around the corner and father's day on the calendar to celebrate as well. I thought it'd be a great time to share some of my favorite wine and beer pairing ideas for some classic summer barbecue dishes. So, whether you're grilling burgers, ribs, briskets, steaks, or pineapple, chicken, kebabs, I've got you covered because I'm going to be sharing a wine and beer pairing for each one of those summer classic barbecue dishes. so if you're ready to learn all about My mouth watering., barbecue pairings, let's get started and dive right into today's episode. Hi everyone. And welcome to the wine shop talk. I'm your host smelly or Rosar. And I'm so happy that you're here with me today. If we haven't met before, it's lovely to have you here. And if we have welcome back now, for those of you who are new, you should know that I've been a professional smile for over 20 years now. And it's my passion, my privilege to make learning about wine, not only fun and easy, but also practical. I want to make sure that you leave every single episode with some real life practical tips that you can put into use. Right? And on that note, I got lots and lots of practical tips for you today because I'm sharing some of my personal favorite pairings for classic barbecue dishes. And these of course are for you to use as inspiration. And if you have a favorite pairing, I would love to hear about it. So definitely reach out. Now let's get started I have five classic summer pairings that I'm going to be sharing both a wine and a beer for you Let's get started with classic grill burgers. Now let's just say who doesn't love a barbecued grilled burger, and whether you're a cheese or bacon no matter what your topping of choice are, this is just a summer staple. So we need to think about what are we going to pair with a hamburger? And the biggest caveat of any pairing that I need to share is always you're going to pair to the strongest flavor in the dish. And that obviously can change, especially with burgers. Everybody makes the room and maybe you're a grilled mushroom person. Maybe you love Applewood cheddar. Maybe you put jalapenos on top of. So you're always going to be working with something as well as condiments the mustards, the catch-ups, the barbecue sauces and condiments are a vinegar and sugar base. And if you've listened to me before, you know that those are a vinegar base, which means they're going to strip the fruit flavors out of wine. So we need big, bold wines to go with a big grilled barbecue burger, no matter what you put on top. So my go-to wine for this is going to be a rich velvety. Medium to full bodied classic California's infidel. Now the body, the richness of this wine needs to hold up to anything and everything that you put on top of it, whether that's grilled onions or jalapenos or maple bacon, whatever you put on top, we need a wine that's big enough. Zim Mendell also has nice silky tannins on the back. So it's not going to be really mouth drying, but it's very lush. And so find yourself your most favorite is infidel or it's a great time to try. When, and if you are treating dad and you're barbecuing, if you knew he has a favorite. This is a great time, but a classic pairing to me for a grilled barbecue burger is going to be a very classic California's infidel. Now, in regards to beer, if you want to go for beer, I am a fan of doing a classic American pale ale here. It's hoppy bitterness cuts through the richness of the burger, making each bite more enjoyable and sort of refreshing in between without being overpowering or too multi. So that is where I like to go. So. An American pale ale, I think is just a classic summer pairing in regards to beer to go with a grilled burger. Let's move on to sticky barbecued ribs. Now you could be, if you are a dry rub person or leathered in barbecue, size ribs are a finger lickin staple of any good summer cookout and for ribs, especially if they have a sauce, you're going to need to think about what that sauce type is. And if it's a smoky sauce or really sweet sauce, we need to think about it. So to go back to that burger, sometimes Zinfandel can be your friend here. And especially if you're doing really sweet, barbecue sauces with your ribs, but also there's always a little bit of sort of a spicy note too, to ribs. They have a little bit of that peppery finish. And so here is a beautiful time to do a classic Australian Shiraz also is a really great pairing here. It's got a bit more of that. More that peppery notes come through a little bit of smokiness as well. You could also do a classic Seraw, but did watch with the Sahrawi because it's not. Going to be as plush fruit. So the fruit flavors are not going to be as juicy. So on the label, if you see Shiraz, that's going to be a clue that the fruit is going to be more juicy, more ripe red and black fruit flavors, where Sariah you're going to get more of those dried meats and black pepper flavors. So. SRE and Therese, same grape, just two different profiles, depending on how it is labeled. So those are great, great choices, but they're going to compliment the spices of the ribs. And in regards to beer, when you're doing ribs, then I love a brown ale. I want a bit more of that multi sweetness that comes through. Will. I like a bit of hops on the back. I don't personally, when I'm doing sticky ribs, if you will want hops to be sort of the main bit, the grapefruit. Fruit flavor coming off of beer while I'm enjoying the rips. So a brown pale ale gives me that rich sweet multi flavor. It's still rich. It's got enough body to hold up to those ribs and it is just a delicious beer pairing in my opinion, to pair up with your favorite recipe. Now let's move on to one of my family's favorites and this is a smoked brisket. Whether you pick up the smoke brisket, your smoker, yourself, you have a friend who does it. All your neighbors are going to know when you are smoking a brisket and it is just such a treat that slow cooked melt in your mouth. Brisket is such a treat. And for brisket in regards to pairing, depending on what sauce you put on it. But for me, it's really about that smokiness and the texture of all of it comes together. And I just love a classic. New world Cabernet, Sauvignon, the richness opulence of classic Cabernet is show yummy with it. You could definitely do some. Uh, Surat here too, especially to pull out some of that smokiness if you want. But I really like very opulent, rich Cabernet Sauvignon. I'm looking for that Blackberry. The structure of the tannins, and I want the wine to be just as rich and full bodied as the smoking meat for this pairing. So for me, with brisket, love a new world Cabernet Sauvignon. It is delicious. I also, I'm a fan of doing a Cabernet Shiraz blend as well here, because I have find that the smokiness or bit of that bacon that comes through on the shreds with a bit of the Cabernet can be really, really a delicious pairing rigorous wine. And then for beer, because of that smokiness, I'm a dark beer fan. So a stout or a Porter I find is just an ideal pairing. Obviously this is not a meal for something light. This is a full rich. Rich heavy meal, if you will, it's delicious, but the dark beers with those roasted malt flavors. That mere the smokiness of the brisket are just delicious. So a glass of your favorite stout or Porter besides the smoked brisket is just a delicious and opulent way to spend some time on your deck by the barbecue. Now let's talk about stakes. And whether you're grilling a ribeye storyline, or a filet you want a wine or beer, that's going to enhance that juicy and beefy. Goodness. and here in Alberta, where I am based out of, obviously we take our beef very seriously. And so we're looking for. Classic pairings. And to me, there's nothing more classic When you're having a grilled steak as a classic Bordeaux or an Argentinian Malbeck and these are just a classic delicious pairings, the wines, whether you're doing the Melbourne or the classic Bordeaux with the Cabernet Merlot blend. Are going to have the structure and the tannins to match the richness of your favorite steak. And so you're really just bringing this classic. Pairing to your backyard, patio table and for beer, you a couple options here. Definitely many people will go with a double IPA. It's a stronger beer. It is a rich beer. And so many people will go there. You can also do a double box a little bit more that maltiness to come in. There's a few different ways that you can go, And to me, this comes down to, are you a fan of a more hoppy flavor? So a bit of that melt, watering, grapefruit, such as flavor, or do you want to pull those multi rich flavors out of it? Both can work. Both are delicious. Some will depend a little bit on the spice or the rub or the sauce you're going to pair, but you do have a few different flavors here, but depending if you want those bold hoppy flavors that can stand up to that intensity, the meat, the devil IPA is definite. Definitely. beer that people will choose. Or the double Bock go here as well. Or a health advisor is also a good choice. So depends how strong a beer flavor there's definitely different options for, that classic sort of grilled steak and the beer, you can also just do your favorite classic lagger or Pilsner. And enjoy it with those as well. And the final pairing that I want to talk to you is a little tropical. Let's say if you're doing. Sort of pineapple and red pepper, chicken kebabs, you have the sweet, savory skewers. They're a delightful addition to any barbecue and they just, they smell so good on the barbecue. Anytime you put those wonderful tropical flavors on the grill, it's going to caramelize the pineapple and all of those flavors come down off of the chicken, whether you're putting teriyaki on them as well, but something a little bit lighter or for lunch and for here. I love a classic chilled off dry Riesling. So in regards to reasoning, and you're going to look for. Off dry or cabinet or spot. Laser from a German Riesling point of view on the label. You'll see it. Cabinet spelt with a K or. Laser obviously SP um, but these are both a bit of an off dry reasoning that are delicious. Really pull up a tropical fruit flavor with that grilled chicken and the red peppers. You could also try a new world or California. is really delicious. And you're going to get more of those tropical flavors as well. So those are some great choices in regards to wine. and if you prefer beer, then definitely you're looking at a wheat beer or have advisen. Something that's going to also give you those light, fruity sorts of tropical notes that come through really delicious. You can also do. some peach flavored beers come out in the summer, you may have some local breweries that are doing some fruit flavors. So you are looking for. Sort of those stone fruit, the peach, the nectarine to, to pull through. Really fun mouthwatering. It's just a delicious combination. So whether you're doing wine or beer, this is just such a yummy pairing to try. So those are five delicious classic barbecue pairings, And wine and beer inspiration for each one of them, hopefully your mouth is watering as you've listened to Episode. And you're starting to think about the shopping lists that you're going to be creating and which pairings you're going to be trying first as always, if you have a favorite pairing, you do, you, there is no right or wrong in the world of wine pairings. That's really what you enjoy, but you always want to be trying new things. So like I said, at the beginning, the standard rule we go by is you're going to pair to the strongest flavor in the dish. So for example, if you are doing those barbecue chicken pineapple skewers, then the pineapple. Napal becomes a really strong flavor in that dish. And we want to find wines or beers with a tropical note in them. And with the burger, you've got lots of sweet compliments, pickles, onions, all kinds of things. We know it. So the Zinfandel is going to be a strong enough wine without a whole bunch of aggressive tannins. If you will, that is going to be complimentary to your grill burger. So we're always looking to create that wonderful synergy with the pairing and the dish that you're having. Having in a hope today, I've given you some delicious inspiration to consider.
