No Surgeon General's Warning needed for this bonus content. Catch us chatting about smoking of the savory smokin' kind. Meats. Dairy. Pellets vs. chips. Indoor vs. outdoor. This little excerpt didn't make the cut for our conversation about the BUB Roadshow in Bozeman, Montana, but it's full of flavor.

Enjoy this preview of what's to come when full episodes of Proofing Stage resume THIS Wednesday, 2/7.

that all sounds damn delicious and I think about even. You know, I'm not an experienced smoked meat person and I have someone who attempts and does fairly well with the smoker outside. That was a COVID, the COVID hobby that my spouse picked up, which not terrible, I'm not complaining, but it took a while and the smoker is, you know, his standard smoker. We know what to expect with it because he's done it enough times. But if you're smoking in another spot, in another place, I mean, was that also? I mean, or did you, did you do? Okay, because you do enough smoking? Was there any issue with that? I mean, I can't help but ask. I do like to smoke meats.

Oh, I mean, if you like them, then I especially appreciate the question. There was a lot more tweaking involved. I would have liked another day and another brisket or two to be able to test it. I think I underestimated how different the unit was, based on the different type of wood application.

Amanda:
Oh, okay.

 Joan:

So it wasn’t the chip [kind] it was, I had to use pellets…

Amanda: 1:07

Oh.

Joan: 1:08

… for the first time. So, in addition to being outside versus an indoor electric smoker, I had to deal with that as well, and it was hard for me to be able to divide my attention to things like our hashes, I mean the other parts of the hash and then outside, and then inside. Outside if it wasn't the type of smoker where I can, like have an app on my phone and check out how it was doing. So that's something else I would have done differently, but if I didn't reach higher, I would not have learned all this stuff.

Amanda: 1:40

Yeah, that's true. That's true. Well, I got to ask a smoking question.

 Michelle:

[laughing] Yeah.

Joan: 1:46

I think the hashtags for this episode are gonna be easy peasy. It's all gonna involve like smoking lifestyle and like barbecue bitches and stuff like that.

Amanda: 1:55

For me, hashtags are going to be smoking, yeah.

Michelle: 1:59

I'm with ya’.
